Tis the Season to Bake

If you know me, you know I love to bake. I’m always looking for a reason to bake; our new neighbors already think I’m a baking nut. One of them actually told me I should get a job, and wondered how I pay for baking. I don’t think they realize that it’s cheaper to buy and make it yourself then to purchase something from a bakery. Oh, well…. Reagan is learning to love to bake also. What can I say other then she is a girl after her Mother’s heart! We recently bake some cookies for Jake and Reagan was more then happy to help. I think she enjoyed being able to stand on a chair in the kitchen the most. Jake was able to get a few funny pictures, which of course I look horrible in. I had to put a picture from last month’s Marine Corps ball to prove I don’t always look horrible!

I’m sure that all of our friends and neighbors in England are getting a shrinking waste now that I’m not baking goods for them weekly. I thought even though I can’t bake for everyone that I would share a recipe for fudge. I recently had a friend ask me to make her rocky road fudge, but without the nuts. The fudge turned out great for all you marshmallow lovers. I have the recipe below for anyone that is in the mood for some fudge this holiday season!

Recipe~

  • 2 (12 ounce) package Semi-Sweet Chocolate Morsels
  • 2 (14 ounce) can Sweetened Condensed Milk
  • 2 teaspoon vanilla extract
  • 4 cups miniature marshmallows

Directions

  1. LINE 13 x 9-inch baking pan with foil; grease lightly.
  2. MICROWAVE morsels and sweetened condensed milk in large, microwave-safe bowl on HIGH (100 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in vanilla extract. Fold in marshmallows.
  3. PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.

  1. Thank you! After reading this blog and realizing how not terrifying it is, I had to make my own fudge. But with nuts! :) We will see how it turns out once it's done. By the way, she is getting so big!

  2. This made me hungry reading your post - naughty, naughty lady - I will have to go and try out your recipe now! I'm sure Lizzie will enjoy it as much as Reagan:-)

    Btw you look lovely in all your pictures - what better to see than a yummy mummy (mommy for your US friends!) with her with her gorgeous little "minnie me"?

    We can almost smell the lovely smells wafting out of your kitchen over here!
